Double Chocolate Brownies with Sucanat & Sourdough

Fudgy brownies are one of my absolute favorite treats. I usually use the same tried and true recipe that I have been making ever since I was a kid. But this time, I decided to update the recipe by swapping out the white sugar for Sucanat and adding in sourdough starter discard. Also, typically when swapping out Sucanat for white sugar, you’re actually supposed to increase the amount so the conversion would be 1 cup of white sugar equals 1.25 cups Sucanat but I like to experiment and see how little sugar I can get away with while still having a tasty baked good. So in this case I actually dropped the amount to 3/4 cup of Sucanat (from 1 cup of white sugar in the original recipe) and I think the end result is still incredibly delicious with a really fudgy cocoa flavor. Feel free to add to this basic recipe as well by, for instance, mixing in chocolate chips, walnuts, or pecans!

Ingredients

  • 6 tbsp. (80 g) unsalted butter

  • 6 oz. semisweet chocolate chips

  • 1/4 cup (14 g) cocoa powder

  • 3/4 cup (95 g) all purpose flour

  • 1/4 tsp. baking powder

  • 1/4 tsp. salt

  • 2 eggs

  • 3/4 cup (120 g) Sucanat

  • 2 tsp. vanilla extract

  • 1/4 cup (60 g) sourdough starter discard

Directions

  1. Preheat the oven to 350 F (177 C) and lightly grease an 8x8 baking pan with butter.

  2. Melt together the butter, chocolate chips, and cocoa powder in a double boiler or a heatproof bowl set over a pan of simmering water. Stir until smooth and then remove from heat.

  3. Mix together the flour, baking powder, and salt in a small bowl.

  4. Grind the Sucanat in a coffee/spice grinder.

  5. Place eggs, Sucanat, and vanilla extract in the bowl of an electric mixer fitted with the whisk attachment. Beat for about 3-4 minutes. Add in the chocolate mixture and mix until combined. Add in the sourdough starter discard and mix until combined. And add in the flour mixture and mix until combined.

  6. Transfer the batter to the prepared pan and even it out with a spatula. Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
